Very simple "cheese-cake" with red fruits
I found this "recipe" on a Hungarian page and tried to do it. It was so easy. It worked, but I didn't really liked that, it was too sweet, so I changed the recipe. Although the photo is not so great, but it's OK. I hope so.

1 cup yoghurt or kefir (175 ml)
1/2 cup oil
1 1/2 cups sugar (I use a little bit less)
2 cups flour
1 tablespoon baking powder
1 tbsp. vanilla sugar (Bourbon)
Filling 1:
500 g cottage cheese (low fat or fat-free)
250 g Mascarpone
100 g sugar
Filling 2:
2 package pudding (vanilla or cream flavour)
150 g margarine or unsalted butter
3 tbsp. sugar
600 ml milk
Topping:
1 package (approx. 7 g) red gelatine or cake fix
some water (read the instructions on the package of the gelatine)
red fruits according to your taste :)
Preparation time:
approx. 35-40 minutes
Very easy to make this batter. :)
Preheat oven to 180 degrees C (350 degrees F). Butter a smaller cake pan or line the bottom of it with a parchment paper.
In a large bowl mix together all the ingredients. You can use an electric mixer or a wooden spoon. That doesn't matter.
When the batter is ready, place it into the cake pan. Place it into the oven and bake it. It takes about 20-25 minutes, depending on your oven.
Meanwhile, mix the pudding with 3 tbsp. sugar and 8 tbsp. milk. Heat the rest of the milk and mix with the pudding. Whe it is ready, let it cool completely. Then mix with the rest of the sugar, and the butter (or margarine. I prefer butter, it's more natural, although it contains more fat. And calories. :o
Then in a smaller bowl mix the cottage cheese, Mascarpone, and sugar. I use fat-free or low-fat version of cottage cheese, because Mascarpone is greasy and full of fat. That contains more calories than I need. :D
When the fillings and the batter is ready, you can start to build the "cake".
1st layer: the batter
2nd layer: vanilla pudding
3rd layer: cottage cheese mixture
And now, the decoration. Place red fruits onto the top of the cake. Make the gelatine ready and pour ont the fruits. I can't give you instructions, since there are so many types of gelatine and cake fix can be found in shops... Just study them thoroughly and buy the best..., and the simpliest one. :D
Now it's ready. The only problem is that I can't stop eating it. :D
